VELVET WAFFLES


2 cups flour
3 tsp. baking powder
3/4 tsp salt
3 eggs beaten separatey
1 3/4 cups milk
1/2 cup Wesson oil or any cooking oil
2 tbs. sugar

Add beaten egg yolks, oil and milk to dry ingredients. Then fold in stiffly beaten egg whites.

QUICK GRIDDLE CAKE RECIPE


Mix together:

1 cup flour
1 tsp. salt
3 tsp. baking powder
3 Tbs. sugar
1 egg
1 cup milk
1 heaping Tbs. melted shortening

Makes about six large griddle cakes.

DATE NUT BREAD


1 lb. pitted dates (light)
2 cups water
2 tablespoons shortening
1 cup sugar
1/2 tsp. salt
2 tsp. soda
2 eggs
1/2 cup nuts, or more
4 cups flour

Bring dates and water to boil and add shortening. Let cool. Then add sugar, salt, soda,eggs, nuts, and flour. Bake in two large loaf pans for 45 minutes in oven at 350 degrees.
