Corn & Zucchini Medley

A Ground Beef Recipe Card Collection


3/4 pound ground beef
1 package (10 ounces) frozen corn, thawed
2 small zucchini (about 1/2 pound), chopped
1 large tomato, chopped
1/2 cup chopped onion
1 Tablespoon chopped fresh basil or
1 teaspoon dried basil
1-1/2 teaspoons chopped fresh thyme or
1/2 teaspoon dried thyme
Salt and black pepper

* You may subsitute 1-1/2 cups fresh corn kernals for the frozen corn.

1. Brown beef 6 to 8 minutes in large skillet over medium-high heat, stirring to break up meat.
Drain fat.

2. Reduce heat to medium-low. Stir in corn, zucchini, tomato, onion, basil and thyme. Cover
cook 10 mintes or until zucchini is tender. Season with salt and pepper.

Makes 4 servings
